    This is a really neat document, Ken. Thanks for sharing it to those of us that have yet to venture into making sausages.

      First thanks for that! Ya'll need to know if it weren't for Ken & Richtee & me PM'n them over some chicken apple sausage & how to do the gig, I probably would have kept buying store bought. Louie & I appreciate all the lessons learned.

            Ain't nothin but...money...time...& patience. I'm sure the Guru's of this place will give ya plenty of guidance. Me & Louie are trying to come out of our Freshman year.

                      You can buy pork butt for darn near a buck a pound. Try to find some high quality sausage that cheap;)

                        I've got a grinder . . . but no stuffer. I think my nephew got my Dad's old stuffer. Plus my wife has informed me that she does not want me to start making sausage. :sigh:

                        Oh well . . . she diddn't really want me to build the drum either, but she sure does like the chicken that it cooks!!

                            88.... i kinda got hung up on this apple chicken sausage myself made by the bam man. is this the same stuff you are talkin about??? wanting to duplicate that myself.
