Green Cayennes

I have a few "Green" Cayenne peppers that are not going to turn red on the vine. There are also a few smaller ones that have yet to reach their full size. My question is, can these still be used? Can they still be dried on the dehydrator?

I dry a couple batches of green japs in dehydrator everyyear...Some sausage recipes call for it....

If you dehydrate let us know what think....I have never used a green cayene myself.
