well I found time to fire up the smoker today smoked up these nice king salmon steaks.
Soaked them in dark rum for 20 minutes then coated the with brown sugar and salt covered and put them in the fridg for 4 hours then in the thin blue for 3 1/2 hours at 180 degrees and they are taaaaasteyyy

Holy Smokes!!!.... They sure look taaaaaaaassstey!.... Like the sounds of the brine also, gonna have to try that... Nice Work Jim!

I used apple wood,found a great deal on 2# bags at an auction

Good looking steaks. I like smoked fish. I don't smoke them much, but I like them.:thumb:

Nice looking Kings... Wish they were cheaper here in the DFW area... Most meat / seafood markets want prime dollar for them..
