My wife's little brother's birthday was today. He turned 17 and can eat his weight in ribs. So I put on a few slabs of baby backs and smoked a whole chicken.
Here is a pic when I first put the ribs on.

I brined the chicken for about 12 hours in a brine of kosher salt, peppercorns, garlic powerd, the juice of an orange (I tossed in the orange sliced up after squeezing out the juice as well). After rinsing and hitting it with a little dry rub and put it in the smoker too.

Also put in some wicked beans. A small batch mild for the kids and a large batch w/ extra jalapeno and Frank's Red Hot to kick it up.

We had some family over and served it "buffet style" so I cut the ribs down to single bones.

And a pic of the chicken all done. I placed a couple slices of onion and a few more orange slices in the cavity of the bird whle it smoked. It was nice and tender, very juicy.
