  • Smoked chicken, Sausage & okra gumbo - w/pics

    Part II - edt: I just found my other gumbo thread, mods feel free to add this post to that one or leave it seperate

    Here is Sunday's basic version. An apple smoked chicken, apple smoked polish sausage, and okra.

    Started out with a high heat, lard based roux, for the "trinity" I used diced jalapenos vs basic green peppers. REally liked how they worked. I also cut back alot on the celery as I wanted more broth and less veg.

    Used chicken stock, then added the smoked sausage, de greased, then added the chicken, and then for the last 5 minutes or so added the okra(I wanted it crunchy), end result was a really nice version.

    Had mine over white rice & topped with some gumbo file' & hot sauce for a
    great bowl

              Great looking gumbo, Jim! I love the stuff, but have never made it from scratch. I always use the Zatarain's mix. It's pretty good. And, I'm not big on okra either but gumbo ain't gumbo without it!

                its pretty easy, basically a dark roux, and chicken stock for the broth.

                I like to smoke the meat I use, but you can cook the chicken and sausage in the pan and use their fat renderings for the roux, lard and smoked meat works as well.

                      Good stuff

                      That looks like some good stuff, I think the okra is what makes gumbo.

                      Ran across a place called Cajun Connection out by starved rock a few weeks ago. They had some good stuff as well.

                        Cajun Connection is a favorite, maybe 15 minutes from my house, try to get out there for some of his crawfish boils this spring. Old Ron is from Louisiana.

                        On a Chicago food board I belong to we just started a cajun group that will get together and sharer recipes and food so that will be fun.

                        Next weekend(10/16) I am going to do some tasso ham for some recipes, to share and to freeze.
