  • Bonfire party... bring a dish eh?

I am going to my sister's house for a bonfire party and everyone is supposed to bring a dish. So I decised to make a couple of fatties to take with me.

I started them tonight so I can throw them on some time in the morning. Here's how they are looking so far:

Fatty A "Hot" version, a mixture of peppers with onion and mild cheddar

Fatty B "Regular" version, your basic onions and mushrooms with swiss

    Fatty A

Onions and Peppers being cooked together. Later I added some garlic and some crushed red pepper seeds.

    The ole zip lock trick

    The peppers, onions and cheese

    The weave

    The roll (in parchement paper)

Into the fridge to rest til morning.

      Swiss

Shrooms and Onions done and added

Badda boom, badda bing... the roll (actually I forgot to take a pic of the second weave)

That too into the fridge til morning

And since I will be firing up the smoker...

I decided to have a chuckie for dinner before I go for the party.

Threw on some rub, wrapped it in plastic, and threw it in the fridge til morning.

More to follow tomorrow when I smoke them...

I am 99.6% sure that no one that will be there has EVER seen or even heard of a fatty. I am sure they will be a hit. I am planning on taking them there whole and slicing them just as I put them out.

Sounds like a winner, and a great way to introduce folks to real BBQ!
