  • Buckboard Bacon, 1 Hunky and 1 Aardvark Style.

    I had a hankerin' for buckboard bacon plus I needed something really special for my Sept. contest entry.

    So I grabbed 2 boneless butts.


    Decided to try a Mad Hunky style and here are the ingredients.


    Here they are after the Magic Bullet got done with them.


    Butt seasoned and only about 10 days from becoming a buckboard bacon.




    Then it was on to the Aardvark style bacon.






    Now it's time for the magic to happen.


    Once the cure does it's job you can smoke them. I smoked the Aardvark BBB to 140° and the Mad Hunky BBB like a butt that I wanted to slice. All of these were smoked with apple wood.


    First out is the Aardvark BBB.


    Hand sliced.




    Fry test turned out superb. This is one of my favorite bbb recipes stolen right from our limey friend Alex.


    I smoked the Mad Hunky bbb to 190° for tenderness and slicing for my Cuban sammies.


    If you like buckboard bacon, stop buying them kits and try these. The Mad Hunky style is to die for.

    Now that looks mighty fine! I have a few butts that I picked up on sale last weekend. Buckboard bacon is on my list and I may just try that outlandish hunky recipe.

        I really dig the BBB. So much meatier, and just all around superior to the belly stuff. The ONLY advantage to belly is it "looks like bacon". And to me, that's fast becoming meaningless.

          Rich, I just can't get bellies around here. The Asian markets have them, but they're higher than premium bacon. Just no meat packers in this area. Now when I lived up in the Omaha-Council Bluffs area, I knew people that worked at the packing plants and they'd get me all the bellies I wanted at a fair price. And you're right about the butt bacon. It's meatier, which my kids love. They just won't touch fatty belly bacon. Anymore the main reason we even cook belly bacon is for the rendered grease.

                looks good but buggered if I can remember that particular cure lol

                Mind you I've got jerky in the dehydrator and biltong in the box I did last night.
                And I have not the faintest idea what I put in the spice mix for either lol
                I wouldn't mind But I don't get drunk - no excuses.

                Looks like a good savoury cure though - so yah for me

                I did use some Mh last night - probably in the jerky mix lol

                              Hey Gunny, great BBB. I've got some in the smoker right now. But I'm using store bought mix. Can you break down the ingredient quanities?
