  • Jalapeno Pancake.

    My wife was out all day today and when she got home she was starving so she says, so she ate a left over burger from last night. I had taken out some chicken sausage and was gonna make perogis and some butternut squash for dinner. Well now she don't want dinner, so I pulled out a box of this just add water pancake mix I brought along to a comp last summer ( which wasn't all that good) and since I just caught this cold I wanted spicey. So I just dumped some mix in a bowl, added some water and one green and one red chopped Jalapeno. Put in a good pinch of hunky and just made myself one BIG pancake. I'll tell you what, with the butter and syrup I enjoyed really enjoyed this pancake. I am gonna try with a hot water corn pancake recipe that I use alot. Had to take pics so you know I ain't fibben.

    Looking forward to seeing your hot water corn pancake recipe.... I love my Hot water cornbread.. We dont call them pancakes.. Wonder if they are similar??

          I just had to find both the bread and the cake recipes. They are slightly different.
          Heres the Hot Water Cornmeal Pancakes.

          Measure and place in a bowl:

          1 Cup White or Yellow Cornmeal
          1 tsp. Salt
          1 to 2 Tbls. Honey, Syrup or Sugar

          Stir in slowly 1 Cup Boiling Water
          Cover and let stand 10 Mins.

          In another bowl:

          Beat 1 Egg
          1/2 Cup Milk
          and add
          2 Tbls. Melted Butter
          Stir into cornmeal

          I just do this on a paper plate.

          Mix 1/2 Cup All Purpose flour with 2 tsp. Baking Powder and mix into the cornmeal mix with a few quick strokes,. Thats it.

                He he he he he - never thought of that! Bet the hunt camp breakfast (since I do the cookin) is gonna be just a bit different this weekend!

                            Thanks for the post and pix, Lee! Every now and then we have cornmeal pancakes with kernel corn in it. The jalapenos will fit right in. I'm seein smoked corn and jalapenos in corn meal pancakes.
