  • Roasted Mad Hunky Punky Seeds

    Roasted some Pumpkin seeds with EVOO & about 4 parts Mad Hunky to 1 part Kosher Salt ran through the spice mill (Coffee Bean Grinder )...

    These are great!

    Ohh Hunky Fiber. Love them seeds. I gave my three big pumpkins to the the grandkids, I hope they give me some of the seeds.

      You mentioned to me the other day with the OO... Hmmm- I have never used it when making seeds. Maybe I'm missing something?

      I did a batch with dry ranch mix as well as a MH batch- I just spread them out thin on a baking sheet wet, sprinkle and let them sit a while, then bake.

          I kid you not, these are the best Pumpkin seeds I've had. I start @ 225* for about 45 minutes drying them out... Then EVOO, mix well, add the Hunky/Kosher & mix again, increase heat to 300* until done to your liking..... Cool if you can wait..... I have not smoked Pumpkin seeds yet, but the Mad Hunky on mixed nuts & smoked is Da' Bomb

              Really? Never roasted pumpkin seeds? Wow...

              Well, you do your thing with the gourd... carve it and all, saving the seeds, rinsing off the punkin guts

              Then basically season them and bake/roast 'em until a bit- or a lot crispy. Then chow! They are kinda addicting...

                They look good, pump seeds are good but i have never been able to cook them right, i think Fish said it right about cooking on low to dry out for awhile, think i never tried that.

                    Love roasted punkin seeds. Sounds like a winner Scott.

                    Always soaked them in a salt brine overnight and then roasted them in the oven. I've done the ranch deal before, but will have to try them hunkified.

                      Taking a couple of the grandkids to the pumpkin patch this weekend. This is gonna inspire me to get a couple extras for seeds

                        As about the junk pumpkins... sometimes they got a pile of odd or damaged ones ya can get for next to nothing. The couple days after Holloween is when I usually go and load up on 'em for real cheap too :{)

                          Got the seeds from 8 medium to large pumpkins to make. I am making three batches: 1 Mad Hunky & kosher salt (note: out of MH time to order some), 1 Garlic powder & kosher, and 1 Hot and Spicy (Cajun, cayanne, CBP, RPF, and a hint of Old Bay).

                          Once they are done I am thinking of trying them individually and mixed together. I am thinking the 3 different seasonings will be good mixed together.

                          I am using EVOO and a little melted butter, then adding the flava!
