Congrats. That looks like a nice unit. Nothing beats homemade. My grandma used to make the best ever. We have a ice cream maker. The old kind with the tub where the paddle turns in the middle and the tub is surrounded by ice. I love homemade ice cream, but I don't like the fact that it always seems to come out rock hard, especially after you put it in the freezer. Have any idea on how to make a softer ice cream? Recipes, tips, tricks?

Yeah I had the same problem with the first batch of vanilla a few weeks back and, I searched on line. Some say add alcohol or more fat ingredients and even gelatin http://http://www.davidlebovitz.com/...-for-making-1/ I used agave nectar this time to sweeten instead of splenda and it maid a big differance. The ice cream was just hard enough to use my scoop after freezing. I try to keep the sugar and fat content as low as possible, especially since the Mrs. is diabetic.
