can't say scott..............i really haven't been able to do belly yet and at a buck/lb i don't really need to. right now i got 7 butts on ice and 2 in the fridge for smoked tamales i'll do this weekend. as you can see i butterfly them after i remove the bone so i get slices like bellies but a lot meatier.

erain 10-28-2010, 11:00 AM hea Rob... at .99 a pound i wouldnt be doing bellies either. for eating i actually like the buckboard better because it is more meaty and less fat. but i do like some belly bacon around too. but i use it more for cooking, wrap some on a lean venison roast etc....
