    Well almost. After 2 weeks give or take, the fermentation appears to have stopped. Just racked over to secondary carboy. Will let this sit for a few days, rack once more to get any subtle yeasty floaty particulates out a bit more.
    Next step is to bottle.

    Original Gravity, 1.050, Final Gravity, 1.001.
    Alcohol by volume, 6.40%

    My neighbor who buys his beer in Iowa, has 20 cases of bottles for me, all I have to do is give him the deposit on them and dust of my bottle caper. Sweet.

    A tad under 5 Gallons. Gonna be a long cold winter here in Mn, but at least I'll be fat, drunk and happy

    That's Awesome!..... Can't wait to hear abooot the taste test & with the alcohol at that level, I would guess it will have a very favorable taste for all ( I did mean that in a good way )

      Looks good, Are you gonna carbonate any by adding the corn sugar to the mix just before bottling.

        First off, you have my pic. Are you stalking me Second. I seen Jeffs pic in your avatar and I thought to myself, oh shit, I accidentally signed on to smf LOL. You got me on that one.

        The taste right now is pretty much like a dry white wine. Fermenting down that low pretty much depleted all the sugars out, but I think I am going to backsweeten it some with some steiva or Xylosweet. Adds the sweet with out adding additional fermenting sugars. I might also add a bit of apple extract to bring out a little apple flavor to it.

        Yeah will add a bit of dried malt extract to it.

        If this batch goes well, then next year a cider press is in order for sure as we have boat loads of apples.

                Solid brew there! Are you going to be using a clarifier before racking to bottles? Gelatin works, or there's a couple other products for this. Not that it really much matters.

                  Worst hangover I ever had was down to home made 'cloudy' cider. Damn near 25 years ago and I can still remember it

                  Get some isinglass in and clear the crap.
                  Or just filter it, that works too.
                  Get a decent funnel and just pour it through some coffee filters, that works.

                          never actually tried it. The liquid itself is clear - I'd drink that
