    I thought this was kinda cool and I have never heard of this, maybe its an Italian thing? Anyway I thought it would be useful for someone that uses olive oil alot.

      That Joisey accent was killing me... I like the cold extraction method. Take alot longer tho, obviously. A month or so

        I wasn't going to say anything... I guess if you are looking for a fast process on infusing oil, that would be the way to go... I like just splitting some good peppers and drop them in the jar for a few weeks... I guess I am not in a hurry,..

            I tried this method with some of those little hot peppers from the asian farmers market. Those suckers were wicked. I dried them. Putting them into olive oil did nothing. Heating the oil up released the flavor. Not nearly as wicked either. Great for all sorts of stuff, especially stir fries.

            Rich and Ken.....when you do the cold method are you using fresh peppers?

            Would like to play around with this some more. When I get into the new place, I hope to grow more than just the jalapenos and Habaneros.

              Yeah... fresh...or semi-dry. You don't get the same amount of heat from them, but I find when I do use heat, it can be bitter. Never happened going cold tho.

                I use fresh.. I don't look for a lot of heat, more for flavor..

                  That sounds good too, maybe even a better flavor from fresh peppers
