Had this brisket left over in the freezer from my last comp, about 2 lbs I guess.

Cut it up and into the food processor.

Added some Philly cheese and sour cream. Got out the rest of the players, plumb tomatoes, celery, red and green peppers, onion, Chipolte in Adobo and some of my South Western BBQ sauce.

I took this out to a beach bar to watch the Buc's game with some friends. Sprinkled some four cheese Mexican blend cheese on top with Tostitos scoops. They had half of it gone before I could even get a picture. :lol:

When I was a kid, I used to love this chopped up roast beef spread in a can for sandwiches...I think it was called underwood roast beef spread. This is like a super duper gourmet version...I'm gonna try this!
