                      I was gonna toss it, but screw it. Im baggin it and seeing where it stands in a couple weeks. I might as well give ya the rundown on them as far as what they are rubbed with.

                      In the first pic, starting on the left, we have a chesse that I did once before with great results. Cheddar that was soaked in pickled jalepeno juice for 3 days. Next, cheddar and rosemary, the middle one, is coffee rubbed into the cheese and it is my favorite so far. A the smoke, cheese and coffee really compliment one another. Will for sure keep this one as a standby. Next we have cheddar and rubbed sage. Last we have your basic black pepper.

                            My technique for making cheese stalagmites? Simple. Set cheese in smoker. Adjust lid so it is stacked up on several pieces of scrap wood, kinda like the game Jenga. Then, when you leave the smoker to do its thing, hope the wood pieces fall and the lid slips back on the smoker, trapping all the precious head itside. Walla, instant cheese snot LOL. I used my big chief for this several times. Next time, Im using better wood scraps

                            It is fresh coffee and I'm tellin ya, it is really good. A dard roasted coffee is what I used and WHEN I do it again, I may slightly reduce the amount I rub into the cheese. Try it sometime in a small piece to see if you like it.

                              Sorry Todd, but that's funny right there. And within about 3 nano seconds, it ends up as someone's avatar.

                              Still can't compare to Rich's Chernobyl fired meltdown, but still pretty good.

                              flavors sound pretty good too, and I bet that after it sits, it'll be pretty awesome...smokey and delicious. You'll have to see if you can find any of Alex's snowflake ritz crackers.
