Hello all, I'm new to smoking meats and new to this site. I live in Seattle and have been using a Webber kettle for years. Last year I picked up a Brinkman gas grill. This year I picked up a small Char-Broil smoker with a side fire box. The weather here has been cold and wet so I have yet to fire it up. I have been looking for info on proper smoking ect. My next trip yo Hawaii I plan to pick up some Kiawe wood for some Huli Huli chicken.Comment
