it is really important to get kids in the kitchen at an early age imho. Makes them interested in food, cooking, and eating more than chicken nuggets and mac-n-cheese.
I have my 4 y.o. help out with alot of things, if not helping she enjoys watching and tasting sauces, marinades and the finished product.
I think equally important to helping in the kitchen is to take kids out to eat, especially to ethnic restaurants(thai, vietnamese, japanese, chinese, indian, middle eastern, etc). It will broaden their pallate, and appreciation of food. Even before my daughter had teeth she was sampling food off of our plates.
Lastly I think it is important to take kids out to the farms to see where food comes from, and how it doesn't just magically appear at the grocery store and on the table. We visit local farmers, folks who raise pigs, and the turkey farm(going tomorrow as a matter of fact) regularly.

It was a bit rough at the time, but boy do I remember the hog Grandpa slaughtered and butchered when I was 5...
