Fishawn 11-19-2010, 09:32 PM Got some of SMOKE FREAK's nuts in the smoker @ 240* with Pecan..... While I had them going, I thought I would construct another ghetto cheese smoker & try some Cheddar with my beloved Pecan..... That way, I will be able to taste test Hickory -v- Pecan on Thanksgiving..... Soaked Craig's nuts in A Water, Sugar, Sea Salt brine.... OH.... And added some Vinegar :noidea: .... To try to get that Salt & Vinegar thingy that is so GOOD (or bad?) on chips.... Love that FN ghetto smoker.... :nana2: :cheers:

Yes..... Kinda..... The CookShack has a little smoke outlet on the top in the middle, about 3/4" wide..... I waited about 1 hour, until "your nuts" had dried a bit... :lol: .... I have pictures, I just forgot to post them.... Hey, it/s Red Wine & beers tonight.... :nana2:

Cheddar about to get the Pecan Beatdown..... Note.... right about in the middle of the picture is the smoke & condensation outlet from the top part of the CookShack..... This is how all the Pro cheese shops smoke their cheese..... I think..... or maybe not.... :lol:

Here are the SMOKE FREAK's (And thanks to others that were very similar :thumb:).......... After about 3 hours in the smoker.... :thumb:

1st batch got some Kosher Salt & Splenda ran through the spice mill to get it really fine....
2nd batch was Sweet & Spicy Tabasco, which I think is a relatively new sauce..... it tastes pretty good, with a mild heat & sweet..

And.... Blair's Golden Death Sauce... It's Hot, But Good...... I like it! .... Don't put it on real nuts though.... :whistle:

Craig..... You caught me here..... I'm not sure where to go with these things now... :lol: .... I was thinking another round in the smoker to dry them out like you mentioned.

Fishawn 11-21-2010, 12:50 PM 2 outta the 3 turned out really good..... The regular smoked I vac packed with Kosher Salt/Splenda powder were excellent..... The sweet & hot ones were good & the Blair's Hot Sauce ones were pretty good, and a little hot, but not too hot.... All were sent to the microwave for a little additional cooking time to further crisp up..... I put them in for a minute, take out, stir & another minute, then let them cool..... These needed 2 minutes..... The vinegar in the brine could just barely be tasted (I did not use much).... So next time, I will add more if I am going for that salt & vinegar taste, or just leave it out if not.
The regular smoked ones tasted like The can/jar Smokehouse Almonds, but with a different smoke flavor.... Pecan... :thumb: ..... If you have not tried this yet, it is worth investigating.

Most of the cheese is still resting in vac packing, but we did open 1 bag.... it's still a little "green" (strong smokey).... I'm gonna open them up, let them sit out a bit & then zip lock for tommorow, hopefully to mellow them a bit :noidea:

:lol: ..... Not really a cat fan in general, but this one is a lot different, more like a dog in a lot of ways..... My 7 y/o son has been pounding on it since it was born, so it's used to it & not much scares it anymore..... He loves his HAM!!!
