  • Homemade Venison Chili Cheese Dogs

    For some reason, I got a bug up my ass for some some homemade chili. Not bean chili, but CHILI, Texas style. (Yes, I did live there for 10 years)

    Stared off with my D.O. and a Tbl of Crisco in the bottom.


    Now, some coarse ground venison (2 # worth) from one of this years deer.


    Cook this until it about 1/2 way cooked, then add 1 Tbl of Paprika and mix well.


    Once mixed in, add the following.
    14 oz. of Beef Broth.
    8 oz. Quality Tomato sauce.
    1 tsp Granulated Garlic
    1 tsp CBP.
    2 Whole Jalapenos.
    2 Cups Water.

    Spices and Japs added.


    Bring to a boil the reduce to a simmer. Cover, and simmer for 1 hour.

    After an hour, remove Japs and squeeze to get the juices out and discard.

    Next, add the following spices and such.
    1 tsp Granulated Chicken stock paste or 1 bullion cube.
    3 Tbl Chili Powder.
    1/2 Tbl Kosher Salt.
    1 Tbl Onion Powder.
    1/2 tsp Red Pepper Flakes.
    1 Tbl Paprika.
    1 1/2 tsp Cumin.
    1 Tbl Homemade Sazon or Goya Brand.
    1 tsp Brown Sugar.

    The spices above.


    Added to the D.O.


    Simmer 45 minutes covered.

    After that add the following.

    1/4 tsp Cayenne Pepper.
    1/2 tsp CBP.
    1/2 tsp Cumin.
    1/2 Tbl Sazon Mix.

    The above added and mixed in.


    Cook 30 minutes covered, then 15 more minutes uncovered.

    All done, ready to eat or add to dogs.

    All beef wieners, Homemade Venison Chili & Cheddar Cheese.
    Went down great on a cold blustery day here in Minnesota.





    Of course this can be made with course ground beef as well. Start with a good chuck and use a coarse plate 1/2"-3/4".

    What I used for my Sazon was the following.

    1 Tbl of each.

    Kosher salt
    Granulated Garlic
    Cumin
    Oregano
    Paprika (Normally, use Annatto, adds nice dark color but I didn't have any)
    CBP
    Ground Coriander

    Add this to some fresh ground pork sometime and make into patties and fry up. Start with 1 Tbl per pound and adjust to your taste.

    Oh MY! That's some great lookin' dawg chili sir! I am somewhat surprised by the apparent lack of fresh fine dice onion? I would NOT use mustard on that tho!

        Thanks guys. Nope. No minced onion in this one. Pretty much just meat and spice. Texas style don't allow for all that other stuff. However, when I make my Yankee chili, I load up on that stuff. Lots of peppers, onions, beans. When it gets a bit colder, I'll whip up a batch of that and post it. Definitely NOT a chili to eat in close quarters to others

                  You are killing me here! I love chili cheese dogs. If I ever get around a SevenEleven I always stop and get a chili cheese dog. I love them!

                        Cheers was going to ask what the hell sazon was

                        I think we're going to have to start a thread on chilli powder. If I used 3tbs of mine the stuff would be totally inedible by anyone but dilip (my indian neighbour) and the chilli would just wipe out every other spice. I figure maybe 2 tsp would do the job.
                        Anyway I digress.

                        So that's texas chilli ?
                        Have to whip some up at some point, great tutorial.

                          Yep, I was thinking that same thing. Hell, just reading the recipe and looking at the pictures required a courtesy wipe.

                          Nice recipe, lots of flavor. Yum! I love a good chili cheese dog. I do like mine with some homemade mustard and raw onions. Thanks for the detailed recipe my brutha!

                            that looks fine Todd.... very very fine... one thing about venison, personally i think ground venison was made for chili. i do not believe you can make a chili thats even close with beef. not pushing the venison envellope or dissing beef, its just so much better... thks for sharing and cant wait to see your yankee version. saved and hope to try some up this w/e...
