  • Barbie-doe sheep & wild pig snack sticks

The owner of the property i lease to hunt let me take a sheep a few weeks ago. I have been wanting to try something new so here we go. Going to use a summer sausage recipe with cure in sheep casing about 3/4 inch diameter. I have been getting the equipment, spices and meat out. Will post up when I get the run started. The rain and cool weather should be owtahere by smoke time tomorrow. Pic date was not set when pic was taken. Smoke up...

It is ground and stuffed. And waiting for the cure to do it work.

Cant wait to fire up the smoker tomorrow. By the way T-H I think it is more like 599 to go...Next time I will reduce the size of pic's.

Do your own casings well well well. Might have to give that a go, next round...Seems maybe could get messy.
