  • Dont need to fire up the smoker to get a ring

    Slow roasted, in the oven a 9# pork butt. Stuffed, and rubbed it with cayenne, paprika, garlic, salty, sugar, jalapenos and garlic...

    damn brilliant. took it to 200 degrees internal, served with smothered potatoes with turnips and some gravy I made with the drippings..

    Hmmm 22 degrees...must be the secret. Well...either the seasonings cause a small cure, it soaked in color from them, or yer oven's on fire?

        edited the post, 200 degrees, took about 7 hours @ after starting @ 450 then cranked it doen to 275 after 20 mins.

        not sure if salt, jalapenos, garlic, cayenne, sugar, and paprika will cure anything overnight.
        Just because you welded some shit together doesnt make it a WSM.

            it was a nice twist, I am hooked on cajun/creole cooking right now(smoker and kettles gettin little use), loving the simple, homestyle recipes and preperations.

            cant wait for our week + in NOLA in January...

              I think its more like if you want to have great tasting pork, you need to buy great pork. but you can take less than superior tasting pork, smoke it, and have great tasting pork....
              something like that anyway...

                mortons table salt...2 tbsp, with 2 tbsp cayenne, 2 tbsp paprika, 2 tsp white sugar, a bunch of minced garlis, and a few seeded jalapenos..

                    Huh... maybe the paprika color? I was thinking maybe ya used some of the "sea" or "natural" salts... which can of course contain nitrates.
