  • Making bacon....

    Here I go...
    Three bellies have been curing for 13 days..

    here is a side view of one


    here are the three...
    cayanne, regular (for richtee's hunky bacon) & cherry chipotle....



    cold smokin' these bad boys, prolly Tuesday...
    Wish me luck!!

              I keep putting off doing more bacon. Surprised how fast I went thru almost 20 lbs of it.
              Kelly, this is looking nice. How long you gonna smoke it? Looking forward to seeing this finish up.

              ......thinking to myself, that I really need to get off my but and get some more bellies ordered.

              lets get this thing going with some points WTG

                        I am gonna smoke it and test it and continue till I like the flavor, I suspect prolly 12- 15 hours

                            The bellies went into the smoke this am...
                            After the fry test, the plain bacon was way to salty so I let that one soak,

                            Here they are drying to form the pelicule...
                            left to right, cayenne, cherry chipotle, and plain old bacon


                            after about 4 hours in


                            Thanks for peeking! I will post the sliced bacon tomorrow!
