    Does it matter which way I slice this stuff? I can't get it on my rival length wise, but sideways I can. Does it really matter how I cut it?

    Nope. One way it will curl a bit more...but who cares :{)

            since i butterfly my butts i cut it cross grain to get fat in every slice..........you did fine.

              Across...so you get "cells" of meat surrounded by the sinew lines. Cups up funky-like. Still eats well tho
