Had quite a bit of pulled pork leftover from last Saturday's smoke (http://www.smoked-meat.com/forum/showthread.php?t=960) so this morning I made a pulled pork omelet.

Nothing fancy, just some pulled pork, pico de gallo and some mushrooms.

Oops . . . :lol: I always have a tendency to make my omlettes a lttle too full.

On a plate with some dice potatoes and a slice of toast. Add a little OJ and breakfast is served.

Pretty darn tasty. I'll have to do those again sometime.

That's a breakfast that will stick to your ribs. Another fine idea with leftover pulled pork! :sausage:
