Thanks to Rich, I got some celery stalk powder in the mail the other day.
Was schedualed to do a grill session for a memorial reception yesterday.
Used my new batch of Mad Hunky on some pork cushions and whipped up a custum rub for some tri-tips. Also on tap my special meatballs. First off I used the celery on the tri-tip rub and was very pleased with the flavor before the rub, but lost most of it after the cook. Very mild I could have used much more. Second I added it to my veg mix that goes from frying pan to the meatball mixture. Conclusion; it has an amazing ability to "pull" flavors together. Probably why mirepoix has such an important role in so many dishes.
