Here are the two butts going on some ungodly time tomorrow morning..


here is one just getting dressed with mustard the other is already done with my 3 martinis and a Jacuzzi rub.. sorry they are so dark...

both are a little over 9 lbs each, not much of a fat cap I guess they are trimming that off now when they send them to the butcher..??
Mopping with the Tullamore Dew and apple juice... Hickory smoked

Eh...fat caps are getting smaller because of breeding/feeding too. My Hunky relatives bitch 'cause they can't find fat enough bellys for the "shutny szolonna"- hunky bacon fry. I'll have to make a post on that some time.

one nice thing about iowa, you can find a locker, that will give you a butt, with plenty of fat. They do local farmers. Not big enuff of a locker to do the factory farms hogs.
