  • English Christmas Cake

    Happy Christmas Smoked Meaters!

    I wanted to show a traditional Christmas Cake. My husband is English and Christmas wouldn't be Christmas with out this cake.

    American's think of this as a fruit cake. Yes it has fruit, but raisins and currants and real dried cherries. There isn't any of that wierd sugary fruit we have here.

    So, about 4 weeks ago I made the cake. I wrapped it in parchment paper, poked holes in the top of the cake and I 'fed' it a few tablespoons of brandy and gran marnier every week. I kept it in the garage where it is about 40 degrees in a tupperware container.

    After it has been 'fed' for a few weeks I take it out of the garage just before Christmas and glaze it with jam because I am going to put a layer of marzipan on the cake and the marzipan won't stick to the cake without something...well...sticky.



    I used tawny orange marmalade

    Next I took some marzipan and rolled it out thusly



    and wacked it on the cake.



    Now it gets either a layer of fondant or royal icing. I opted for fondant this year because I like the "TA-DA!" factor.



    Fondant rolled out.



    Fondant on....and now

    "TA-DA!!"



    Chrissy Cake!

    Now...Into the smoker for two hours at 200F



    hehe...kidding.

      So, what you are saying is that I can't make one today, for tomorrow? I would like to try that though. Any chance that the recipe might find it's way to us?

            Absolutely beautiful looking dessert! Sounds great too! I especially like the diet it has been on for the past month. Merry Christmas.

                      In Delia's recipe she doesn't say anything about 'feeding' the cake or making it super early. I just do it that way because that is the way Peter's mum told me to. So if you ever do make it, make sure you 'feed' it lots!
