  • First attempt at smoking Mozz

    I milk a couple Dexter cows and have a passion for making real milk cheeses.
    Yesterday I said to DH ''Lets just DO it" Of course he thought I meant something else but I told him to get the smoker out instead. Then we got the tin can and put the chips in it and stuck the soldering gun in a hole we made in the bottom to get the chips smoking. Ok so we made a few mistakes but I still think the cheeses turned out Fabulous. Smoked Mozz!! Did some with Mesquite and some with Hickory! I am so excited to taste it today.....I know, I know we should wait at least a week but one got a lot of smoke so we will eat it at his brothers today!!

    The cheeses.....the white one is plain for comparison....the really dark one was an oops the damn can is on fire!!!!

    Damm, wish I would have made some smoked cheese for the holidays.
    Now comes the hardest part about smoking cheese, the waiting game.

    I wonder if thats what happened to Rich's

          Thanks guys....I really hope they taste as good as they look. Is Rich the guy with the picture with the melted cheese in the smoker? I was trying to find that pic yesterday to show DH but couldn't find it.

            Well... I can see it ended up wrapped and not in the bottom of your smoker... sooo...SUCCESS!

            Now the tough part... if you can wait a couple weeks to eat it... it'll be MUCH better!
