  • I'm sure you all are bored with this stuff, but..........

    .............I'm trying to get back into feeding the hungry around my house. So I thought I'd turn out a couple loaves of sourdough challah (Jewish egg bread). This is my favorite bread, though unless toasted, I can never eat it again. That's OK though, because my family loves it just as much.
    One loaf goes to a friend as a "thanks" for the 100 lb bag of bread flour he GAVE me. He is a supervisor at a Panera bread factory. So I was able to get their special high protein flour.





    They're both 6 braid loaves. My dough was a touch wet on these, so the braid strands aren't as pronounced as usual, but it should be light and airy and have a fantastic rich flavor.

        good looking loaves.

        so us the toasting to change the texture for digestion, or to caramelise the simple carbs into complex carbs, or something else ?

            Can't eat anything thats sticky or moist and doughy (if that's a word), like white rice, white bread, sticky starchy potatoes, etc. It can form into a lump and cause a blockage.

                    Glad to see you back at the sourdough, Tom. It has to be a real challenge to bake something that looks that good and not be able to eat it.
