  • My new toy, Ahhhh I mean obsession.....

    Thanks for all of the advice from those who posted to an earlier post I made about a grinder. Santa came to the BP home and look what he left me...



    I think he made a mistake, cause he also left...... Oh well the door is locked now...



    Ok I have this new grinder.... Now what....

              Congrats man! One of my favorite recipes. You can make bulk sausage if you don't want to stuff.

              Hot Italian sausage

              5 pounds pork butt ground with 3/8 die

              salt 2 1/2 Tbs

              sugar 1/2 Tbs

              coarse black pepper 1/2 tsp

              cracked fennel seed 1 1/2 Tbs

              cayenne pepper 1 Tbs

              crushed hot peppers (flakes) 1/2 Tbs

              coriander 1 tsp

              caraway seed 1/2 tsp

              cold water 1/2 cup

                  A good breakfast sausage... patties are fine!

                  2 Kg .25" plate ground pork butt- on the fatty side
                  5g rubbed sage
                  15g Kosher salt, or to taste
                  1g nutmeg
                  3g thyme
                  5g coarse ground black pepper
                  .5-2g ground red pepper, depending on heat required
                  3g mustard seed

                    That is the grinder that I am going to get too. I'm a little angry with myself for not grabbing it when it was on sale for $79.99 and now they have it for $99.99 (would've covered the shipping). Oh well, next time no procrastinating.

                      Hey Bob, Check the directory on the web, you may have a northern outlet near you. I looked here and there isn't one in Michigan at all, closest was Indiana

                              You are gonna love your new addiction... congrats!!

                              The first thing I did with my grinder was grind up all the trimmings off a few racks of St. Louis ribs, bagged it and froze it for future ingredients. Also, I haven't bought ground beef in years... grind your own!
