I got some farm fresh Bantham eggs from a friend last week. I had no idea how little they are and I thought they’d be a great size for armadillo eggs. I also did a couple of stuffed chicken breast at the same time. I didn't take any prep pictures of those, but they were stuffed with smoked gouda, ham and mushrooms then wrapped in bacon.
For the eggs, I put a little American and pepperjack cheese and a few mushrooms then wrapped it all in a sausage pattie.
Into the smoker with the chicken. This was the first time I used the Brinkman and I have done no mods and didn't even know what temps I was getting.
Brand new....
Plated with some mashed potatoes.
I have to say that the chicken was really good. Took about 2 1/2 hours for it to get done to internal temp of 165. The eggs were amazing and I'll be doing more of those little guys soon! I am also pretty happy with the Brinkman....although it is no CG duo :D
