While down in the basement, I checked on the cider that has been aging/conditioning for the past month. Have 40+ bottles so I decided to sacrifice one and see how its coming along.
Very little "psssssst" when I popped the top, still needs more time to carbonate. Temps down there are pretty cool so I may move it up to the laundry room to help facilitate the carbonation process.
Other than that, it's pretty dammit good. Fairly close to a Woodchuck Cider. Nice apple taste throughout and a good light apple aroma. Finishes crisp. Color nice and clear.
Give it another month and I think it will be perfect.
