    Hey there smokey brothers and sisters,

    I have a REAL DEAL va sugar cured ham, Jim's happy ham from Wolftown, VA.

    I have had it in my closet for almost 2 years now, it is very dry, but smells great and looks good, no excessive mold or anything gross.
    There is one more point, but this one I fully understand and I am at peace with. It has mites, but I am a cheese monger I deal with food mites everyday, I actually probably introduced them to the ham from work. They are a natural part of food. They are only in the exposed face anyways.


    My question is, other than being excessively dry is it stiil fit to eat? I figure just soak it for 2 days in water changing it once during the process. and go as usual.

    I just want to hear everyones opinion before I make myself sick on deliscious salty ham...mmmm....haaaaam.
    sorry, I drool sometimes.

    Soaking and a water change... should be good. Maybe even a soak and a par-boil. Also consider a trimming of the surface meat. Mites don't go deep ;{)

      Ya'll are tough, Louie would kick my ass if she saw them critters & wanted to eat it. It's fate would be cut up & put in crab traps off her Dad's dock.

        Thanks RT, I figgered if it didn't smell like rot, it didn't rot. I just needed someone to say so wit me.

        88, it takes time but you can get a wifey to get used to anything. I can't get Katie to wear a BBQ team shirt , but she did get a t-shirt that says my husband rocks! that's close enough to me.

        She eats mites and organs, and animals that sane people normally don't eat, and it's all thanks to my silver tongue of convincing.......or lovin'!

              Your right them mites usually don’t hurt the meat.
              I’ve had a couple that had mites. Just trim the area where the mites were.
              Then I wash ham under cold running water with a stiff brush to remove excess salt.
              Then soak in cold water over night.
              I always cook my cured hams in a Iron kettle outside.
              I put the ham in the kettle skin side up and cover with cold water then cover the kettle.
              Bring water to a boil then reduce heat and simmer about 20 min. per pound.
              When I take it out of the kettle I remove the skin it usually just falls off.
              Then I put on a glaze( usually just mustard and brown sugar) and throw it in the smoker or oven to brown it up a little.

              Va. hams are the best

                  YES!!! "Jamón" is great in Spain! Last time we were there, I think a whole ham was about $250 and up in 2006. Current price on bone-in Jamón Iberico ham is going for about $96 A POUND!! But that's their famous black hoof ham and I believe the most expensive.

                  Believe me, I intend to research this further in May while we are in Barcelona. It's cool to see the hams hanging behind the bars. This is a very common sight.

                        I soo want to try that, I hear the Black footed Iberico Pig only eats acorns and that is part of it's unusual flavor. HAAAAAAM
