Well fancy to me anyway
Another recipe from my new book.
Called Lavash Crackers.
Pretty basic mixture of things. 6.75oz flour.
.13oz salt
.055 oz instant yeast
.75 oz honey
.5 oxz veg. oil
3-4 oz room temp water.
Mix that all up and knead for 10 minutes.
And then place into a oiled bowl and cover until doubled in size.
Remove from bowl and turn out onto a greased or oiled surface.
Flatted down and light sprinkle with flour.
Shape into a rectangle then use a rolling pin and roll until approx 12x15". Mine was bigger, the rolled out dough that is.(). Keeping it fairly thin.
Transfer to a parchment lined baking sheet where I gave it a light brushing of butter, and topped with Kosher salt, ground Cumin, Sesame seeds, Poppy seeds, Caraway seeds and Paprika.
After that, I ran over it with a pizza wheel to score the areas to break them up after baking.
Out of the oven, cooled and broken up. Good flavor, especially the cracker itself. Next time, I will double down on all the spices.
