  • Pig Newton, Yardbirds, and a Brisket

    Uggghhh.

    It was a good day, butt a tad disappointing. I suffered from chronic camera malfunction, and fatty "fornicatus upus"... da' fatty wasn't exactly where I wanted it.

    FYI, I lost better than half of my pix, due to a CF flash card corruption. There's another thread on this subject...

    First off, the Pig Newton... It has possibilities. I put WAY too many Fig Newtons in it... and screwed up the filling density... way too runny. Overall, the flavor was good... if you like Fig Newtons. I know what to do now... this will be good, I promise, just some more prototyping needed. No recipe until I get it right.

    The yardbirds were a hit! I brined them with my basic poultry brine overnight in the fridge, rinsed them, and then rubbed inside and out with Mad Hunky and fresh ground dried rosemary from last year's garden. I used rpmorey's chicken racks... man those things are AWESOME!! I used empty sliced olive tin cans (8 oz., I believe), they fit perfectly!! GREAT JOB RP!!! I squeezed half a lemon's juice into each, sprinkled in rosemary, placed the squooshed lemon halves in each can, and topped with apple juice.

    As for the brisket, I did the layering spice and injection thing that I posted a few weeks ago... we are about to try it out tonite.

    Anywho, here's what I have left of the pix:

    Ready to slice... a bit of a bad pose I'm afraid... looks pornicatish, yet I remain flaccid...

          the fig newton fatty just sounds wrong to me- sweet... nope...
          i don't even like sweet wood but thats just me...

                  That brisket pic looks AMAZING!!

                  Keep working on the Pig Newton. I can take sweet with my meat. And I'm a big fan of the Fig Newtons so I anxiously await the completion of your recipe.
