Todd suggested to me that I might try this bread.
It's Rosemary Potato Bread From the Bread Bakers Apprentice Book.
It just came out of the oven, so I haven't tried it yet.
Here is is before going into the oven, after fermenting overnight in the garage.
You can see I had lumpy mashed potatoes!
Out of the oven. The only time I get those bubbles on the crust is when I do overnight ferments.
