I got a couple of nice pork bellies the other day, and decided to do some bacon.
I used Hi Mountains Buckboard Bacon Cure just to be on the safe side. Once I'm a little more proficient, I'll mix me own.
Here's the pork bellies, bought from a local smallgoods maker.
Boned and skinned they total around 4.5kg each.
My skinning skills are not the best, but I managed not to axe murder them too much
Cut them into halves, rub in cure then put them in ziplock bags.
Sat them in the fridge for 7 days, turning the bags occasionally.
After coming out of the fridge, I gave them a good rinse, and soaked in clean water for an hour or 2.
Then back to the fridge for a day to let the pellicle form.
I then cold smoked the bacon in my UDS using a homemade cold smoke generator for 7 hours.
Once this was done, I brought the drum up to 95deg celsius, and cooked them until they hit an internal temp of around 60deg celsius.
Once the bacon had cooled, I sat it in the fridge for another day before slicing and packing it.
I must say, it's pretty good gear
