    Fired up the UDS at 9 am, got her settled at 230 deg, applied a different rubs to each apple juice injected butt, tossed them on and went back to bed! Made sure I took my Maverick remote with me, rolled over and checked temp every hour, so good so far, shook the charcoal basket once when temps started falling, did the time crunch and decided to ramp things up a bit when they were at 160 deg, opened the ball valve and rear cap to ramp things up a bit to get her through "the stall" Left the house to do some shopping at 5 pm with temps at 180 deg, got back home at 6:30 and the drum was at 280 with meat temps of 200! Perfect! Company was late so I just closed the cap and closed the ball valve to 1/4 holding temps right at 200 for the next hour! Think I'm really liking this drum!

              looks great those drums do a wonderful job....i did a 12lb brisket yesterday and my drum ran from 235-255 consistent for 14hrs......
