  • Debreziner rippers....

    Debreziners are a Hungarian sausage, basically a spicy hotdog. I did some of these up over the past few weeks deep frying them in my wok. West of Chicago there is a meat market, and sausage shop that turns out magnificent house made sausages. Ream's Elburn Market in Elburn, anyone in Chicagoland owes it to themselves to visit. The Debreziners, brats, polish, andoullie, and everyhting I have tried have been excellent. Ill post a link to their website below.

    For the Debreziners I put a small spiral slice in them, and tossed them in a wok full of hot oil, a couple minutes later they are done. Deep frying the dogs takes them to another level, slightly crisps up the casing, but leaves the center juicy...

    Did some topped with chili and cheese, mustard, kraut and onion, and with cole slaw, chili and onion... all great..

    here is a ham I rubbed with brown sugar, then covered in a rootbeer glaze I made at home. I basted this ham ever 15 minutes for the 5 or so hours it was in the oven. Turned out a great ham.

      I hadnt heard of them, but when I saw them in the display case I knew I had to have them. A little thinner than a typical hot dog, with some more spices(not hot).

                  i got a 1/2 dozen of those dogs in the freezer and some brats, I need to cook them up this weekend.

                      Cool link.....

                      I will have to make it a stop when I am cruising through there when the weather breaks. Need to rig up a cooler that fits in a saddle bag.....

                      What kind of oil do you use in the wok?

                      The ham looks good as well!

                            Meat hunter, I saw your post, thanks for visiting, right now I am posting my meals the past week in NOLA, what a great food city.

                            Oil in the wok was regular vegetable oil, canola or corn I think.
