    I felt the need to knead today as I just got done kneading a dough by hand for some Pitta bread. I just like to feel my dough unless it's a quick bread.

    My dad had a book called No need to Knead

        There is lots written on the Net about no knead bread.
        Check out Breadtopia.com or thefreshloaf.com.

        I think the present opinion is that gluten develops by others means that kneading.
        I do a combo of stretch and fold and kneading in the bowl with a bowl scraper ala Richard Bertinet.
        Lots written on the subject. I have spent hours and hours reading about this.

          I've needed dough a few times but I've never kneaded bread. Thinkin back now, had I had more bread, I wouldn't have kneaded the dough....

            I tried an almost identical recipe just last week only it was twice this amount and it said to refrigerate after rising then just pull out a chunk, fold a few times and bake. The only thing different in the recipe was that the rise time was less then half of this one. As mine didn’t rise nearly enough and bread was very dense I will try this one. It baked up great in the oven on a stone, had a nice crispy crust but it was too dense. Have a general question that came up with this bread but don’t want to steal this post so i will start another.

                My no-knead-method is even simpler.
                1) wake up in front of telly at 3am
                2) stagger into kitchen and load up bread machine
                3) go to bed
                4) get up, tip fresh bread out of machine.
                5) go have shower while bread cools down.

                But I have to admit I am very tempted to try this stuff.

                      So you guy's really like them bread machines? When I first started, it was all by hand. Then the wife bought me one of them there gizmos. Maybe it was just my Betty Crocker Machine, but I didn't care for the end result. I have since ( 12 years ago ) purchased a Kitchen Aid Mixer and still find myself kneading by hand. I can take my frustrations out on the dough I guess and maybe should do it more often.

                          well, based on how it looks and smells, and also on ease of preparation, i am definitely calling this one an unqualified success - only one thing left to do, and that's TASTE it!

                            pretty hard to argue with results like this:



                            simple, fool-proof and as you can see, very nice-looking - and that is nothing compared to the smell. tasting test tomorrow, and i do not expect to be disappointed!

                              awsome crust...that is the most inportent thing in my book...love a crispy crust...hmmmm not sure that sounded right but i will leave it out there, its early and only on my first cup of coffee. The bread part of the product from the bread machines is fine but you just dont ever get close to a crust like this.
                              I had one for years and used it some but finally passed it on as was never that happy with it. Ease of use A+, bread B+, crust C-. I usuallly let my kitchenaid do most of the work now. I have teen aged boys if i need to take out any frustrations.

                              adding the link to the no-knead recipe I tried, almost identical but think I like the extended rise time of your recipe. Will be trying this again soon. Love the look of your picture...thats my kinda bread!
