  • Super Bowl Lox and Bagels

Started with 2 sockeye fillets. Cured for 21 hours, cold smoked with hickory and cherry for 11 hours.

    Made some bagels.

    Sliced up the salmon

Made a snack tray for later, and vac packed some for the freezer.

With the rest I made breakfast. Salmon, cream cheese, poached egg, bacon bits, chives and secret sauce on a fresh bagel.

    Keith

My best asset however is the inspiration from the members on this forum.

Oh and either that pot is huge or that cooktop is a smaller one?
It makes it look like a two burner.

Did you make that sopressata in the picture? That is a nice looking sopressata.

The lox is really really great and the bagels and total presentation is excellent.
