    Shortest title yet. Quick & simple nowadays .... 5 lbs. Tillamook Cheddar Alder smoked. Pork Butt & Brisket Mad Hunkified & Pecan smoked. Cheese Good, Pork Good, Brisket Flat Pretty Dry (did not foil). Gotta vac pack it with some Au Jus

      Sometimes - it's just the brisket you get, Scott...

      But foiling does help. AND resting in that foil.

        Looks awesome!

        I really want to try cheese. And brisket for that matter. Haven't done either.

          It all looks good. Another option for that beef would be "SOS". I'm sure you have heard of creamed dry beef over toast with peas and onions Oh Yeah Good stuff.

              Yeah Lee I love SOS, but these are going to me labor helpers from this past weekend..... I just wish I woulda foiled..... Experimenting & first time I have not foiled a brisket & sure wish I would have....

              I need to add some kinda liquid when I freeze & vac pack the brisket.... Thinking Au Jus but am open to all suggestions folks.

                          Ya know .... the brisky looks/sounds really good, dry or not, but I ain't too sure about Butt Cheese. Hell, I ain't worked up the courage to try Head Cheese yet.

                          How about simmering some Au Jus with either some of the rub you used on the brisky or some chili powder and cumin to add to the brisky before freezin?

                          I've been wantin to smoke some cheese for quite awhile, but have been waitin for the new Amaze-N Smoker to come out before I buy one.
