I introduced these in a jerky thread, now they have a life of their own.

I had to sample a wing drumette before I put 'em away, they really were great!

Sorry Dan, I used to provide all that, just haven't posted in a long while...

No rub, but a sprinkle of CBP and chicken fajita season after a 5 hour soak in a brown sugar, kosher salt, fresh garlic, sliced onion, and peppercorn brine. Smoked 3 hours keeping the temps on the hot end around 275 using straight hickory. at the 3 hour mark, I put all the turkey into a foil pan and covered with foil for another hour. Figured the concept works well for everything pork I do, so why not? have done these a few times before, and the flavor has always been great, but it was a tug contest to get the meat off all the "ribs". This time, after the "foiling", the meat just fell away. Won't do it any other way again!

Hey Seboke in the future if ya need somebody to sample them turkey legs just ship them this way, I'll sample them for ya. Just be sure to ship about 5 of them so I can give ya a good cross sample of the batch. Say one from each corner and one from the middle ought to do. I'll be sure to give ya an honest opinion and send ya pics of me and the bone pile.

Seriously though, they looked as a famous tiger says...GREATTTTTTTTTT!
