    Hubs and I started a winter bacon project in November. We're trying different recipes to come up with the best bacon flavor for us. Our local butcher sells me the bellies for $2.29 per pound. I have to call him by Monday so he saves me two bellies from the Tuesday butchering.

    Our first bacon we just did the hi mountain BBB. Rubbed in, cured for 8 days and then cold smoked for 36 hours.

          Decent price on bellies... I have never used the HM cure (Or any commercial one) but lots of folks like it! Looks good Shell!

            Temps outside were in the 20's! I bout one of the a-maz-n smokers for the cold smoke. We're currently on our 4th bacon cure and once I had to add sterno because I was afraid of the meat freezing!

              Well I figured it would be a good starting place for testing purposes since so many people seem to use it...we've used different recipes since this first bacon. I did like the flavor of it, but I actually like a sweetness in my bacon.

                    very nice i need to get back on this bacon gig.......and of course our temps will be back up in the 60 and 70's next week

                      Great looking bacon! Great price too, my butcher was selling them to me for that price then went up to 2.99 then to 3.29. So, no bacon for me for a while. I used HM and was happy with the results. Thanks for sharing the bounty with us!!

                          Great looking bacon. Keep us posted on your research and results. I'm always looking for the perfect bacon too. For me it has to taste like some I had as a kid
