    Into the haze....


    and after a couple cans of dust



    Vacuum sealed these to store in the fridge for a few months.

    I forgot I had this cheese so it's been holding for a couple months already. Nice & firm for cheap cheese.

    What flavor smoke did ya use on em Dan? .... Looks like they turned out perfect

                looks good.

                Yeah I tend to buy blocks of cheese and leave them for some time before getting round to smoking. I like to think of it as a extra maturation time :-)

                So when you say two cans of dust - how are you generating the smoke -
                Tin can and soldering iron or something a bit more sophisticated ?

                  A little bit more but not too. I use 1100w electric burner and coffee can with drilled holes in the bottom and about 2" up the side. Not so many that will cause a flame-up but enough to keep it burning.

                  Even when using lump i use the can method for chips, chunks etc. Seems to be the way to go for me anyways.
