  • Jerky mathematics....

    FYI jerky makers... it ain't easy to make money at!

    Started with a whole top round.



    Pulled off cap trimmed pretty tight for 15 Lbs quality jerky, 8 pounds sausage fodder and about a pound of real scrap.

    Price now $4.67/Lb for jerky meat.

    Add cure and spices for 15 lbs $10. Now at $5.34 Lb.

    Will update thru finish. Expect that to about double...

    Good jerky from a smokehouse around here is $15 a pound. Interesting to see what you come up with.... Probably about $15 a pound

        Jerky in my area is $20/lb.
        I made a small batch this weekend. It was 2lb of sirloin. All I did was marinade in 1 cup of Moores, 1 TBL of Worcestershire, 2 TBL of Mad Hunky, 1 TSP garlic & onion powder, 1 TSP Louisiana Gold Pepper sauce, 1 TBL curing salt & 1 TSP chipotle powder. Smoked at 160 for 5 hrs. It was probably one of the best batches I did. Brought with me to the parade and it all went in less than an hour. Had request for next weekend to sell, but IMO, it ain't cost effective for me to do that. Rather just make for myself and few friends.

          Worst part of the math for me is that it doesn't matter how much I make, its all gone within a couple of days.

              at least doubled , 5 lb cured meat ( inside round ) yeilds me approx 2 1/2 lb finished product ... cost for good boughten stuff around my parts is $ 20.00/lb

                  Not a question of quality here. That remains constant. But more an observation that one can't compete on a price alone basis AND maintain that.

                      And total dried jerky weight of 6.5 Lbs... about $11.85 Lb. No labor, electricity, charcoal, wood... included in that.

                        bought a packet of some jack-links jerky on a recent road trip...it was some miniscule amount like a few ounces or something and I paid ~$4.50 for it.

                        If I do the math from the jack links website, they sell 8 3.25oz packages for $40.00...that is 1.625 lbs for $40.00 or 24.62 per lb for something that isn't even close to what your stuff is. Home made for the quality and price cannot be beat.

                          Jerky seems way over priced until you make some yourself and actually weigh the final yield vs costs. Best place in Michigan to buy jerky is the Dublin Store located south of M-55 between Cadillac and Manistee. All kinds of meat and game at the most reasonable prices I've seen. Beef usally around $15 per lb and games meat around $25 depending on what it is. And it's really good jerky to boot.
