  • My First BBB.and its goooooood

    well my buck board bacon was suppose to go in the smoker on the 26 of Feb.but I didnt get to it until yesterday.few extra days did'nt hurt a thing

    here it is right out of the ziploc bags and all rinsed off




    here it is out of the thin and blue,brought it up to about 130 internal temp



    and here it is all sliced up



    I did 3 differant flavors one was salt brown sugar and pure maple syrup
    one was salt brown sugar and cbp
    and one was salt brown sugar and a heavy rub of papirka

    as a very bias judge i think they all are rated at a 10 and even the wife gave me her approval

    Nicely done Jim, looks great
    Got the next batch curing up yet? That stuff is sorta like smoked cheese. It runs out quickly. Best to have another round of it curing

        I dont know anything about curing but in the first pic it looks like the colors vary? Like the mixture wasnt evenly distributed? Like I said I dont know squat about curing,In my uneducated guess, the pink centers dont look cured? just curious

                        I try to keep the temp around 180 and it took about 6 hours to get to 130 interal temp,but the weather here yesterday was about 15 above and we 25 mile/hr winds
