  • Crawfish for a boil & some bisque

    I belong to a Chicagoland food group, and we have an occasional cajun/creole food party. Last time I did a creole shrimp, and tasso dish(home smoked tasso).

    This time I wanted to do a little more. I am doing a crawfish bisque(even stuffing the heads).

    I ordered up some live bugs from these cats in Louisiana, not a bad price 10 lbs for just under $60(price included fed-ex, spices, beads, bibs, koolie.). These guys are the source my buddy uses for his crawfish boils, so i know they will be good.

    Arriving Friday I am going to boil all 10 lbs, and steal all the heads from the wife so i can reserve all the butter. 5#'s to eat, 5#'s for the bisque and the stuffing for the heads.

    Ill get some pics of the bugs, the boil, and the bisque. Just excited and wanted to share.

      lol, thanks I have been watching the calendar since I ordered them last friday.

            Those crawfish are probably rice fed, which is a good thing. The ponds in N. Louisiana prduce some nice size crawfish. Looking at the pictures on their web site has me craving some good crawfish. I can just smell the crawfish boiling as I type.

                sound great never had crawdads before they dont look that good here but what do expect in oklahoma

                  you make up a stuffing with some tail meat, trinity(celery green peppers, onion, garlic, bread crumbs, crawfish butter), stuff em and bake them in the oven, you add the stuffed heads to the bisque when you serve it. Its actually not the whole head, but the shell portion behind the head.
