My last B³ was so good, but it disappeared almost immediately. This time I'm starting with a larger amount to begin with. I am also doing a Chef Rob inspired Chipotle version...I can't wait for that to be done.
Started with 17.8 lbs of pork butt...removed the fat cap and the Alex named "stink gland". Trimmed out to 14.3 lbs.
Here is Chef Rob's Chipotle version...this baby is going to explode with flavor. Using Tender Quick at the recommended package rate or 1/2 oz per lb.
I also did a repeat of my original that I liked so much. Here they are all sealed up and ready for a refrigerated nap.
I'll be back in a couple of weeks.
