Made these this past Saturday night. My wife's favorite and one of mine, too.
I usually buy a couple of butt ends of beef tenderloin at one of the local big box stores. They come two/pack and are usually a decent price. Trim the silver skin and any fat, cut as many steaks out as I can, vac and freeze. We like these, cause you always know your going to get a tender, juicy, delicious steak. These are from some that I did a few monts ago.
Had some sweet potato oven fries and broccoli to go with it.

The fixings.
The pecans I got out of the freezer to replace the burnt-to-hell pinenuts that I threw out. While I was toasting the pine nuts, the guy that hunts around our place came to the door and I got to talking. You know how it goes. I hate when I burn my nuts. Oh well, the pecans are just as good.
Steaks on. BC charcoal with a couple pieces of oak for flavor.

The steaks hanging out with the cheese. My 3 year old son just wants the meat. Under the broiler until the cheese starts to brown.
On the plate. Sorry for the finger smudge on the plate. I'll do better next time. I wanted to eat.
